August is the month when summer fruits reach their peak ripeness.

In the fertile plains of Emilia-Romagna, between Ravenna and Forlì-Cesena, some of the peaches and apricots in Italy.

These golden fruits embody all the warmth of the Po Valley sun and the wisdom of a millennia-old fruit-growing tradition.

 

Native Varieties and Their Uniqueness

Peaches from Emilia-Romagna are an extraordinary example of how the region can influence the quality of a fruit.

Grown in the floodplains between the Rhine and Rubicon rivers, these peaches benefit from soil rich in organic matter and a temperate continental climate: hot summers and cold winters that allow the trees to rest properly and concentrate sugars in the fruit.

The Romagna Peach PGI represents the pinnacle of this region’s produce, along with the famous “Reale di Imola” and “Cafona” apricots, which have found their ideal habitat in these areas.

Cultivation techniques are based on careful pruning and drip irrigation, allowing the fruit to reach optimal ripeness.

  • 4 ripe peaches
  • 100 g of fresh arugula

  • 1 tablespoon of balsamic vinegar

Preparation:
  1. Wash and cut the peaches into thin wedges

  4. Prepare the vinaigrette by mixing oil, vinegar, honey, salt, and pepper
  5. Dress the salad with the vinaigrette
